Warm and deep loamy soils with high parts of clay located between Riva
di Sotto e San Paolo (250 m.a.s.l.).
Winemaking
Slow fermentation in wood barrels, maturation on fine yeast in Tonneaux's for 5-6 months.
Aging
Up to 5 years.

With light meat dishes, wild fowl and aged cheese.
