Harvest

Manual harvest and selection of the grapes.

Winemaking

Destemming and mash fermentation under controlled temperature in stainless stell tanks.

Aging

After malolactic fermentation, ageing in barriques and stainless steel tanks for 12 moths. Assemblage 2 to 3 months before bottling.

Appearance

Bright, intense ruby red colour with a subtly lighter core.

Ideal with speck or bacon, mature cheese and sausages, delicately spiced vegetables, pasta and meat dishes.
