Brilliant, vibrant cherry red with brightening edges. Aromas of raspberry, cherry, spices, fresh hay, and almond blossoms. On the palate, lovely notes of cherry, roasted almonds, spice, and pink pepper emerge. A long, powerful finish with velvety tannins.
Vinification:
Low-yield cultivation with careful, selective hand-harvesting done in stages. Maceration with partial stem inclusion, then refined for 7 months in used barrique barrels on the lees. An exceptional example of its variety in many respects.
Pairing Suggestions:
Pairs well with Vitello Tonnato, pasta dishes including those with fish or cheese, slightly chilled with tuna, and, of course, with prosciutto or Swiss chard rolls with buckwheat filling and a delicate paprika sauce.
