Gentle maceration fermentation in small stainless-steel tanks, remontage, racking off after 12 days, maturation in third and fourth-fill barriques.
Excellent with grilled meat as well as Melanzane alla Parmigiana, perfect with lamb chops and classic braised dishes like goulash or roast, brilliant with beef roulades and fried rice noodles with soy sauce.
