deep, humus-rich clay soil on calcareous gravel

Harvest

Manual harvest and selection of the grapes from the historic "Bischofsleiten" vineyard.

Winemaking

Destemming and mash fermentation under controlled temperature in stainless steel tanks.

Aging

After malolactic fermentation, 6 moths of ageing in stainless steel tanks and used tonneaux (10%).

Appearance

Bright light cherry red colour.

Ideal with speck or bacon, cheese and sausage, pizza, delicately spiced soups and pasta dishes, roasted fish and meat.
