Growing Conditions
The vineyards extend over an east-facing zone at 550 to 600 meters above sea level. They are located on an alluvial cone of limestone debris, mainly angular dolomite rocks, with a fine soil of reddish clay. The soil is very deep, loose, well aerated and well-drained.
Winemaking
The whole grapes are pressed, followed by natural sedimentation to remove impurities. The wine then matures for 11 months in large wooden barrels with continuous bâtonnage. Finally, a further 4 months of maturation takes place in stainless steel tanks on the fine lees.
