Growing Conditions
Sauvignon Blanc has been present in the Steinhaus vineyards for many
years.
The clones used in the vineyard and the vinification process are inspired
by Sancerre, with the aim of having a residual sugar content approaching
zero. Outstanding finesse, typical hints of tomato leaf and freshness are
the main characteristics of the Sauvignon Alto Adige DOC from Steinhaus.
Harvest
The grapes are harvested by hand, keeping the plots separate, then
crushed and destemmed
Bottling
It spends a few more months in the bottle.
Winemaking
by maceration on skins for a few hours and then a long period of cold stabilisation.
Aging
After low-temperature fermentation, mainly in steel with a small part in wood, the wine stays on lees until the August following harvest
Appearance
straw yellow with greenish highlights
Food Pairing
Perfect for aperitifs and with starters. It perfectly accompanies fish dishes, especially shellfish.
