Growing Conditions
This distinctive wine comes from selected vineyards in the Pinzon site in the municipality of Montagna (Montan), situated at about 500 meters above sea level. The calcareous soils, rich in clay and humus, provide ideal conditions for this grape variety. The microclimate is shaped by the elevated location above the Adige plain and the northwestern exposure, which ensures long evening sunlight and pronounced temperature fluctuations. Regular air movement - especially the well-known “Ora” breeze from Lake Garda - ventilates the vineyard rows, keeps the grapes dry, and effectively protects against fungal diseases.
Winemaking
After careful destemming, the must ferments for about seven days at a stable temperature of 22–25 °C (72–77 °F) in cement tanks. Frequent pumping over and punching down of the cap ensure intensive contact between the skins and the must, allowing color and aromas to develop optimally. After being racked twice, the young wine is aged for twelve months in French oak barrels. It then rests for an additional six months in stainless steel tanks before being bottled, where it matures for several more months prior to release.
