Growing Conditions
This Pinot Noir grows in selected individual vineyards in the Pochi (Buchholz) area, at an altitude between 400 and 800 m above sea level (1.300 – 2.600 ft). The soil is of limestone origin with good clay content, abundant skeleton and good presence of organic matter. Climatic conditions are governed by the area's superelevation with respect to the Adige plain and its exposure to the northwest, which prolongs its evening sunshine and a considerable temperature range. Winds blow regularly at different times of the day, particularly the “Ora del Garda”, which laps the slopes rising from the south along the Adige valley, guaranteeing the healthiness of the grapes by inhibiting the development of fungal diseases.

Winemaking
The clusters of this Pinot Noir Riserva, immediately destemmed, are left to ferment in concrete tanks for about 7 days at a constant temperature (22 to 25 °C | 72 – 77 °F). At regular intervals, through pumping over and punching down, the must is in contact with the skins. These operations allow optimal absorption of the color pigments from the skins while enhancing the fruitiness of the wine. After two careful rackings, this Pinot Noir Riserva is left to mature for 12 months in French oak barrels. After blending and resting for 6 months in steel, the wine is bottled and left to age for a few months before it goes on sale.
