Growing Conditions

It grows in different vineyards in Tscherms and is hand-picked at different harvest times. The vines in the vineyards are older than 20 years.

Winemaking

Careful harvesting and pressing of the berries, 10-day maceration followed by refinement for 17 months in French barrique barrels, 30% of which are new oak.

Pairs well with poultry and wildfowl such as guinea fowl, mushroom dishes, and a vegan Swiss chard roulade filled with buckwheat and served with a delicate paprika sauce.
