Growing Conditions

Location: Medium-low hillsides along the Val d’Adige and Oltradige valleys.
Vineyard Elevation: 820 - 1,640 feet above sea level.
Soil type: Predominantly limestone with clay.
Training system: Pergola, Espalier and Guyot.

Harvest

Early to mid September.

Winemaking

The fully ripe grapes are harvested by hand and undergo a gentle pressing. Fermentation takes place at a controlled temperature of 62-64 Fahrenheit. After initial racking, the wine rests on its lees to develop texture and mouthfeel.

Appearance

Straw yellow color with faint greenish highlights.

Food Pairing

An excellent aperitif but also a very versatile companion to many different foods: seafood starters, fish dishes, flavorsome soups, and white meats. It is a must-try with lean and spicy preparations.
