Fresh, full, agreeable, lengthy palate.
Growing Conditions
Production zone: High hillsides around Sopra Bolzano.
Soil Type: Gravelly, calcareous, porphyry in origin.
Training system: Simple pergola.
Harvest
Manual harvest; end of September, beginning of October
Winemaking
Typical white wine method with brief low-temperature, enclosed maceration to maximize the extraction of aroma compounds. The wine is fermented in steel at a controlled temperature of 57-58 °F.

Food Pairing
Very good as an aperitif, also goes well with seafood risotto, grilled
fi sh and fried food in general.
