Controlled fermentation in small stainless-steel fermenters, gentle extraction through remontage, racking off the skins after 15 days, aging in first and second-fill barriques for 12 months.

Food Pairing

Excellent with roast beef, stuffed peppers, and braised lamb shank, excellent with filet steak, brilliant with Beef Wellington, Wagyu burger, and sweet-and-sour marinated pork chops.
