Winemaking

Gentle mash fermentation in stainless steel tanks, gentle extraction through remontage, racking off the skins after 14 days, elevage in small stainless-steel tanks.

Food Pairing

Excellent with smoked and air-dried sausages like bacon and traditional sausages, perfect with pasta dishes with tomato sauce, such as Penne Amatriciana, as well as with pizza. Brilliant with hearty fish dishes like monkfish with tomato broth and Taggiasca olives.
