Growing Conditions
The Schiava and Lagrein grapes for the S. Maddalena Classico are cultivated together in a natural way with great diligence, passion and love. The vineyards are located on the south-exposed vineyard sites of the wine village S. Maddalena near Bolzano at an altitude of about 300 m above sea level and have a gravelly moraine soil. The vine stocks are grown according to the traditional South Tyrolean pergola-system. Due to the situation on the steep slopes a high amount of manual labour is needed.
Harvest
The grapes are harvested at mid-Spetember by hand.
Winemaking
The mash fermentation takes places at a temperature of 25°C in steel tanks and is controlled regularly. After the fermentation process the new quality wine is matured for a few months in oak barrels.
