A brief history
Our aim is to produce quality wines. By growing smaller quantities of more varieties in our vineyards, and by working extremely hard, we’ve developed a range of quality wines that are known and admired far beyond our borders. Grape variety: Pinot Blanc Location: Matschatsch 630 m.s.l. Yield: reduced 80 dz/ha Alcohol content: 13,5 Vol. % Acidity: 5,8 g/l Residual sugar: 1,8 g/l Description: The relatively high altitude of the growing location gives this wine a crisp acidity with strong aromas of citrus fruits, pineapple and quince. The subtle scent and taste of oak wood develops through storing a third of the young wine in new oak barrels for five months. This gives our fruity Pinot Blanc a strong body with a long, mineral finish. Recommended with: This wine is a perfect accompaniment to fish, poultry, light meat, risotto and light pasta dishes. Serving temperature: 9° - 11°C
Grape variety: Vernatsch and Pinot Blanc Location: Kaltern Alcohol content: 12,0 Vol % Acidity: 8,0 g/l Residual sugar: 8,0 g/l Description: Our Brut is a white, fresh and slightly fruity sparkling wine, made from both white and red grape varieties. It is very mild and pleasant to drink with hardly any residual sweetness. Recommended with: Our sparkling wine introduces a lot of freshness into any meal. I recommend the Dominikus Brut as an aperitif, for light starters, fish dishes, white meat and dessert. Serving temperature: 5° - 7°C
Grape variety: Gewürztraminer Location: Kalterersee Bärental 340 m.s.l.; Tramin 250 m.s.l. Yield: reduced 80 dz/ha Alcohol content: 15,0 Vol % Acidity: 4,5 g/l Residual sugar: 1,7 g/l Description: Our Gewürztraminer is a bright yellow wine with a wide range of aromas: rose petals, honey, ripe apricots and lychee. It is very fragrant and full of flavor, with a strong body structure and a lasting finish. This Gewürztraminer surprises with a dry finish and no residual sweetness, which is unusual for this grape variety. Recommended with: This wine is enjoyed best with strong cheeses, Asian cuisine and fish dishes, but also excellent as an aperitif wine. Serving temperature: 10°- 12°C
Grape variety: Moscato Giallo Location: Kalterersee-Bärental 360 m.s.l. Yield: 40 dz/ha (new vines) Alcohol content: 13,0 Vol % Acidity: 5,9 g/l Residual sugar: 1,7 g/l Description: As the name suggests, this wine presents itself with beautiful nutmeg notes. The grape variety grows in the Mediterranean climate above Lake Caldaro, allowing it to develop fine aromas of orange blossom and citrus fruits - impressive on the palate with an enchanting finish. Similar to our Gewürztraminer, our Moscato Giallo has a dry finish, which is uncommon for this variety. Recommended with: This wine is a perfect aperitif drink, it is dry and aromatic and is best combined with fish dishes, antipasti and cheese. Serving temperature: 9° - 11°C
Grape variety: Lagrein Location: Tramin-Karmatsch, 230 m.s.l. Yield: reduced 100 dz/ha Alcohol content: 13,5 Vol % Acidity: 5,0 g/l Residual sugar: 2,5 g/l Description: Our Lagrein has a garnet-red color with violet reflections. On the palate it reveals a delicate aroma with notes of violets and cherries. Fine-grained tannins with a pleasant acidity give the Lagrein a long finish. Recommended with: This wine goes well with game, red meat and strong cheeses. Serving temperature: 16° - 18°C
Grape variety: Vernatsch Location: Seegüter 230 - 310 m.s.l. Yield: reduced to 90 dz/ha Alcohol content: 13,0 Vol. % Acidity: 4,5 g/l Residual sugar: 2,0 g/l Description: My big goal with the special "Dominikus" line is to produce the best Vernatsch wine in all of South Tyrol. This work has paid off, as this wine has already been awarded the "Vernatsch of the Year" charta seal twice. For our "Dominikus" only a selection of first-class grapes grown in ideal locations around Lake Caldaro get pressed, after which they are aged in large oak barrels. We produce this wine in honor of my father, the builder of the impressive Dominikus cellar and himself a great lover of Lake Caldaro wine. Recommended with: A wine that goes well with all dishes, particularly suitable for light cuisine, pasta dishes, pizza or fish. In summer, this wine ist best served chilled. Serving temperature: 12° - 16°C
