steep slope in the immediate vicinity of Caldaro Lake
deep, humus-rich, sandy clay soil on calcareous gravel

Harvest

Manual harvest and selection of the grapes of the oldes vineyards.

Winemaking

Destemming and mash fermentation under controlled temperature in stainless steel tanks.

Aging

After malolactic fermentations, 12 months of ageing in barriques (30% new). Assemblage 2 to 3 months before bottling followed by another 12 months of ageing in the bottle.

Appearance

Dark and rich ruby red colour.

Food Pairing

Ideal with grilled and roasted meat dishes, venison stew, lamb and game dishes, mild cheese.
