Harvest
Manual harvest and selection of the grapes from the historic vineyards with the oldes vines.
Winemaking
Destemming and mash fermentation under controlled temperature in stainless steel tanks.
Aging
After malolactic fermentation, 12 months of ageing in barriques (30% new). Assemblage 2 to 3 months before bottling followed by another 12 months of ageing in the bottle.
Appearance
Dark ruby red colour.
Food Pairing
Ideal with roasted and grilled meat, lamb and game dishes, mild cheese.
