Growing Conditions
Caldaro, Seehof: 230 above sea level medium-heavy, humus-rich sandy clay soil on calcareous gravel in the immediate vicinity of Caldaro Lake.
Harvest
Manual harvest and selection of the grapes.
Winemaking
Destemming and mash fermentation under controlled temperature in stainless steel tanks.
Aging
After malolactic fermentation, ageing in barriques and stainless steel tanks for 12 months. Assemblage 2-3 months before bottling followed by another 6 months of ageing in the bottle.
Appearance
Dark deep ruby colour.
Food Pairing
Ideal with spicy pasta a risotto; boiled, stewed and roasted meat, sheep´s cheese.
