Growing Conditions
The vineyards are located on a south-east facing, sun-drenched slope at 450 to 500 meters above sea level. During the ripening period, cool nights ensure excellent fruit development and acidity preservation. The soil consists of sandy, loamy marl resting on primary rocks such as porphyry
and granite.
Winemaking
An 8-hour cold maceration is preceded by pressing and natural must clarification. This is followed by slow fermentation at a controlled temperature of 18 °C, with 80 % of the wine being fermented in stainless steel and 20 % in large wooden barrels. After fermentation, the wine is aged for 6 months on the fine lees.

Sauvignon Stern pairs well with asparagus dishes, light pasta creations, grilled vegetables and fish dishes. It is also very suitable as an aperitif wine
