Growing Conditions

The vineyards are located on south and east-facing slopes at an altitude of 300 to 450 meters above sea level. The soil consists mainly of limestone gravel, which is loamy and well-drained.

Winemaking

Vinification begins with destemming ripe and healthy grapes. This is followed by a brief cold maceration, then pressing and natural must clarification. Fermentation then takes place at controlled temperatures of 16 to 18 °C, followed by 4 months of ageing on the fine lees in stainless.

This Sauvignon pairs excellently with asparagus, grilled vegetables, fish, and goat cheese. It is also an excellent aperitif wine.
