Winemaking
The Pinot Noir is matured in the classic way, spontaneously fermented in large, vertical wooden barrels, then pressed and matured on fine yeast for a further 12 months. After 18 months it is bottled, where it matures for a further 6 months. The fruity, tart notes give it a harmonious, pleasant drinkability.
Food Pairing
This Pinot Noir goes well with all meat dishes, especially with grilled meat and intense cheese.
