Our small family winery is idyllically surrounded by the forest of the unique ice holes in the Dolomites region of South Tyrol in northern Italy. Based on the conviction that nature is quality in its highest form and respect for nature, we have been cultivating our vineyards organically with great dedication and passion since the mid-1980s. As a pioneer of organic viticulture, Rudi Niedermayr, Thomas' father, founded the Bioland South Tyrol association and consequently switched to the cultivation of resistant grape varieties in the early 1990s, as these enable us to do viticulture without the use of pesticides in a way in a way that is in harmony with nature and sustainable for future generations. Convinced of the potential of these varieties, Rudi has also been passionately breeding his own resistant varieties since 2005, which grow from seedling to vine in our mother garden on the farm. This results in grape varieties that are adapted to our soils and the special microclimate on the farm.
 
We are convinced that good wine can only come from vines that are rooted in healthy, living soils and a diverse range of species. What makes our wines unique and special takes place first and foremost in the vineyard. Our focus is on purist, long-lived and mature white wines with depth and minerality that reflect our soils and terroir and are allowed to mature for several years in the cellar. 

In addition to 5 hectares of vines, which grow on dolomite-porphyry soils at around 500 meters above sea level and are influenced by the special cool microclimate of the ice holes and the imposing Gandberg rock massif that rises behind our farm, our diverse farm organism also includes 1 hectare of fruit and vegetable gardens as well as chestnut trees and animals.

Thomas, born in 1986 as the third of six children, was always involved in helping his parents at the farm. Whether in the vineyard, in the cellar or on the tractor – his passion to work with nature began young. He started out in carpentry, where he accomplished an apprenticeship and worked in the field for almost 10 years before deciding he was going to follow into his parents footsteps. To prepare for his new role, he started working for Simonit & Sirch, the masters of gentle pruning. Being on the road a lot, especially in Burgendland, Austria, he slowly began to have an idea of what kind of wine he wants to make. The first vintage under his leading was 2013, where he started to gently accompanying the wines with 100% spontaneous fermentations, no clarifying, fining or filtering. He is continuously evolving what his father started and now works exclusively with resistant grape varieties. Soil is his love language and a regenerative approach to farming his mission.

A fresh, fruity fizz. Natural, unembellished and casual. Blend of Souvignier gris, Solaris and Bronner.


Solaris Blend

Aromatic blend of Solaris and Muscaris. Delicate flower aromas of roses meet with the herbal spice of lemon balm and nutmeg. Full-bodied, spicy and long-lasting.

Juicy, peppery, appetizing. Distinct red wine aroma. 
Old vines planted in 1976, trained in the Casarsa system (high-stem vine training).

Symbolizing its origin, all the hours of sunshine and storms of its growth.


Salty and mineral wine with herbal spices, thyme and citrus peel in the nose.

Refreshing and vibrant blend of Solaris, Bronner and Souvignier gris. 

Orange

3 monts of skin contact with Souvignier gris. Warm tones of noble amber, aromas of plum, amarena, and almond merge with resinous notes and the scent of cinnamon bark. Fresh & juicy with a velvety tannin structure.

Red Blend

Cuvée of Cabernet Cantor & Cabernet Cortis.
Vivid fullness, confident & strong character while still being playful and juicy.
