Harvest

Beginning of September; harvest and selection of grapes by hand.

Winemaking

Fermentation in stainless-steel tanks, followed by about 12 months of development in barrique-tonneau with malolactic fermentation. After assemblage, further maturation takes place in concrete barrels.

Ideally paired with lamb, fawn, but also with hearty fish dishes. Also excellent with hard cheeses.
