Growing Conditions
Our winery is located in the Weinriegl Spiegel directly on Lake Caldaro, at 250m above sea level. The vines grow in the pergola system on limestone gravel soils and in spring it is lined with poppies, hence the idea for our label.
Winemaking
The fermentation and lactic acid degradation took place at medium temperature (22 - 25 °C). After storage in steel barrels on the fine lees, the wine was filtered in February.
Appearance
The color is ruby red.
Food Pairing
Lake Caldaro classico goes well with light Italian dishes and South Tyrolean cuisine. With white meat, fish, salads, bacon and mild cheese.
