Palate
Slightly smoky with a powerful body, soft tannin structure with ageing potential.
Growing Conditions
Warm and deep alluvial soils surrounding of the centre of San Paolo
(350-400 m a.s.l.).
Winemaking
Slow fermentation in stainless steel tanks followed by aging in large
and small wooden barrels.
Aging
Up to 5 years.
Food Pairing
With game and braised meat as well as aged cheese.
