South facing slope in San Paolo on post-glacial calcareous rubble (250-350m.a.s.l.).

Winemaking

Slow fermentation in big wooden barrels, maturation for 5-7 months on fine yeast in small wood, partial malolactic fermentation.

Aging

Up to 5 years.
