Nose
Strong in character, with fine citrus fruits and a hint of white flowers. Nuances of dried fruit, white peaches, ripe apricots, fresh mountain herbs, spiced bread and brioche.
Palate
Velvety texture. Long and minerally finish. Delicate, long-lasting perlage.
Growing Conditions
The Chardonnay grapes come from our oldest vineyards, situated in exposed locations above Appiano between 300 and 500 metres above sea level on the calcareous dolomite rock of the Mendel range with its sand and clay deposits. The south-east orientation, the constant ventilation through downhill winds and the temperature differences between day and night create a unique microclimate in which the grapes develop an optimal acid-sugar balance.
Winemaking
Gentle whole-cluster pressing, several months of aging of the base wine in large wooden barrels and steel tanks, traditional bottle fermentation with a minimum of 48 months of aging on the fine lees in
the historic bunker.
Appearance
Bright straw yellow with silver reflexes.

Tartar, raw fish, fish dishes.
