Multifaceted aroma spectrum of small red berries such as wild berries
and currants but also raspberries and cherries, filigree floral and herbal.

Palate

Elegant in the drink with a supple tannin structure and a fine spicy-fruity long finish.

Growing Conditions

Deep soils of limestone rubble above San Paolo (350-500 m a.s.l.)

Winemaking

Cold maceration for some days followed by slow fermentation at
controlled temperature in stainless steel. Maturation in big wooden
barrels and Tonneaux.

Aging

Up to 5 years.

Food Pairing

With pasta, light meat, mushroom dishes and aged cheese.
