Palate
Full-bodied with surprisingly crisp acidity and a chalky finish.
Growing Conditions
Steep vineyards sloping from the plateau of San Paolo with soils of fine
pored loam and sandy layers (220-350 m a.s.l.).
Winemaking
Slow fermentation at controlled temperature in large wooden barrels
and stainless steel, followed by maturation on the fine yeast.
Aging
Up to 5 years.
