Very complex on the palate with compact structure and beautiful melt. Long-lasting powerful mineral finish.

Growing Conditions

Location Monte, Appiano. West facing slopes beneath the Mendel Mountain, very water permeable mineral limestone soils at 460-580 meters a.s.l..

Winemaking

Whole bunch pressing, followed by controlled fermentation in steel tanks and tonneaux. Aging on lees for 12 months.

Aging

3-10 years.

As Aperitif, with starters, spicy meat dishes, tartar, fish, lamb and poultry dishes, aged cheese.
