Nose

Intense scent of plums and mulberries ripe for picking, blackcurrants
and heart cherries. Fine earthy notes frame the hint of liquorice, cloves
and cinnamon.

Palate

The velvety tannin weave and the characterful body support the sturdy, very long finish.

Growing Conditions

Warm vineyards, deep loamy soils with high parts of clay located around San Paolo (250 m a.s.l.).

Winemaking

Slow fermentation at controlled temperature in stainless steel tanks
followed by maturation in wooden barrels and tonneaux.

Aging

Up to 5 years.

Food Pairing

With light meat dishes, wild fowl and aged cheese.
