Slopes around San Paolo on ventilated limestone debris
(450-550 m a.s.l.).

Winemaking

Slow fermentation at controlled temperature in stainless steel tanks by
maturation on fine yeast.

Aging

Up to 5 years.

As an aperitif, with asparagus dishes, with white meat and with tuna.
