Palate

Very complex on the palate with compact structure and beautiful melt. Long-lasting powerful mineral finish.

Growing Conditions

West facing slopes beneath the Mendel Mountain, very water permeable mineral limestone soils at 460-580 m above sea level.

Winemaking

Whole grape pressing, subsequent controlled fermentation in tonneaux. 12-months maturation on fine yeast.

Aging

3-10 years.

As Aperitif, with starters, spicy meat dishes, tartar, fish, lamb and poultry dishes, aged cheese.
