Nose

On the nose, it captivates with its exceptionally spicy nutmeg note and exotic fruit aromas (kiwi, mango, lemon blossom).

Palate

While on the palate the fine acidity and balanced structure make for a lasting impression on the finish.

Growing Conditions

The vines grow on the southwestern slopes between S. Justina and S. Magdalena on dry river gravel deposits with high sand and medium humus content. Sea level about 400 m, slope inclination of 50 – 60 %.
Trellis in transverse terracing; we practice sustainable cultivation and orientate ourselves as far as possible to the principles of organic farming.

Harvest

The paper grapes (South Tyrolean variety of the Goldmuskateller) are handpicked.

Bottling

Bottled 10 months after harvest. Closure with natural cork.

Winemaking

The hand-picked pepper grapes (South Tyrolean variety of the Goldmuskateller) are de-stemmed and pressed after a 24 hour-cold maceration. The must, free of lees, undergoes a slow (about 25 days) and cool (about 16 °C) fermentation. Further refinement and maturation also take place in steel tanks, whereby we deliberately use simple cellar techniques (aeration, sedimentation, heat and cold input, filtration) in order to maintain the unaltered character of the location and vintage.

Appearance

Its fresh bright yellow reminds us of the ripe grapes just before the harvest.
