Growing Conditions
The grapes grow in our higher altitude and south-southeast looking vineyards with a height ranging from 750 m a.s.l. to 850 m a.s.l.. In this area the cool nights give the grapes a strong aroma and help to preserve the acidity.
Winemaking
In the cellar before the pressing we allow the grape mash to sit for an amount of time depending on the vintage, in order to obtain mineral substances, natural aromas and tannins.
After the pressing, we allow the grape mash to ferment slowly in stainless steel barrels in which the wine sits on its natural yeasts.
