Growing Conditions

a selection of vineyards with southwest exposure on some of the steepest terraces in the region at 300-500 meters above sea level. The soil is composed of calciferous loam with gravel. The climate is characterised by an extreme interplay of sunny days influenced by the Mediterranean climate and cool nights marked by the cold downslope winds from the surrounding mountains.

Harvest

Mid September - beginning October

Winemaking

The grapes are harvested by hand in small bins and gently pressed after a short period of maceration. Fermentation takes place at controlled temperature (18° C) in small steel tanks, where the wine matures without malolactic conversion.

Aging

at least 4 months in stainless steel tanks

Appearance

intensively shining golden yellow colour

Food Pairing

Selida pairs wonderfully with food, especially fish appetisers, cured pork (speck or lardo), soft ripened cheese, white meat, swordfish or seafood; exciting as an accompaniment to spicy dishes of the oriental cuisine and spicy, aromatic creations like lemon-marinated vegetables.
