Nose

Growing Conditions
The grapes come from vineyards planted at 350 – 450 m above sea level in calcar-
eous clay and gravelly soils. They are characterized by a strong interplay between sunny days
influenced by the Mediterranean climate and cool nights marked by the cold downslope
winds
Harvest
The grapes for this wine are harvested in October by hand and delivered in small bins.
Winemaking
Maceration is carried out at controlled temperature (26 ° C) with daily pump-overs and sub-
mersion of the cap to increase the level of extraction from the grape skins
Aging
The wine ferments and ages in a combination of French barriques, oak casks and
stainless-steel vats for at least 6 months
