Nose
Its flowery aroma has a unique varietal bouquet reminiscent of elderflower and nettle, accompanied by yellow fruit aromas of exotic fruits as well as native fruits such as peach and gooseberry.
Palate
This Sauvignon is wonderfully fresh, lively and of hearty acidity. In a wonderful way, Pepi unites juicy freshness on the one hand with appealing opulence on the other hand, a result of the vineyards located on opposite-facing sides of the valley.
Growing Conditions
The vineyards with their calcareous gravelly soils are found opposite each other on the east and west side of the Adige valley in hilly locations above 450m in altitude. The respectively west- and east-facing vineyards are subject to very different sun exposure during the day.
Harvest
Mid - end of September
Winemaking
After harvest, the grapes are gently pressed at low pressure. Fermentation takes place slowly at controlled temperature (19°C) in small stainless-steel tanks.
Aging
long vinification in wood barrels (30 – 40 hl) with 8 months of lees contact and no malolactic conversion.
Appearance
light straw yellow with a green sheen
Food Pairing
pairs with first courses or fish, wonderful with slightly spicy dishes of white meat and vegetables. It is excellent with green cheese and locally enjoyed as an accompaniment to asparagus dishes.
