Growing Conditions

The grapes come from vineyards planted from 250 - 400 in clay, gravel and sandy
soils Strong interplay of sunny days influenced by the Mediterranean climate and the cool
nights marked by the cold downslope winds.

Harvest

The grapes are harvested on beginning of October by hand in small bins

Winemaking

The grapes are de-stemmed and undergo both primary and malolactic fermentation
at controlled temperature (28-30 ° C) in steel and cement tanks

Aging

in both cement and oak casks of varying size for at least 6 months.
