Slightly smoky taste with smooth powerful body.

Growing Conditions

Warm and deep alluvial soils surrounding the centre of San Paolo (350-420 m.a.s.l.).

Winemaking

Slow fermentation in open wood barrels, maturation on fine yeast in used Tonneaux's for 5-6 months.

Aging

Up to 5 years.

With game and braised meat as well as aged cheese.
